Easy Three Ingredient Christmas Bark

I love the idea of Christmas entertaining being all about mulled wine and home baked Christmassy goodies. The reality of this time of year though, is me running around missing An Post international deadlines and trying to find my Dad a jumper that’s at least a little different to last years.

Time is at a premium come December, and all those lovely homemade Nigella goodies I’d planned on creating, unfortunately, don’t always materialise. There are however some cheats when it comes to pulling off festive domestic goddess chic, like being organised (such as freezing pre-prepared cake mix- genius, I know!) and keeping things simple.

It doesn’t get much simpler than this three ingredient Christmas bark, with a ridiculously tasty combination of white chocolate,  pistachios and cranberries. We’re talking literally five minutes prep here for a beautiful (and addictive) end result.

This one also lends itself beautifully to being wrapped in a little grease-proof paper, tied with some festive ribbon or twine, for a last minute homemade pressie should the neighbours pop in unexpectedly, smart eh?!

You’ll need...

340g White Chocolate (shaved off the bar melts a little nicer)
75g Pistachios, chopped
75g Dried Cranberries, chopped

Begin by melting half the chocolate in a heatproof bowl, either over a pot of boiling water or in the microwave. Then add the remainder of the chocolate shavings and stir until completely melted; conching, if you will!

Cover a baking tray with parchment paper and pour the melted chocolate into a shallow pool before sprinkling the pistachios and cranberries from a height until evenly spread around the tray.

Leave in a cool place to set and break into different sized chunks to be enjoyed with your festive drink and movie of choice! The colour combination here is gorgeous, almost to pretty to eat. We said almost…!
